Barista Skills Intermediate
Designed to test key core and more advanced skills and understanding, expected from a competent barista (for example, from someone working as a barista for 6 months or more). Successful candidates should be able to dial in a brew recipe, make a full range of drinks with quality and speed, as well as understand the basic requirements for customer service and maintenance. Introduction to Coffee and Barista Foundation are recommended (but not mandatory) pre-requisite modules. All knowledge and skill from these modules will be assumed as being held and may be tested through the practical and/or written assessments.

Brewing Intermediate
Designed to introduce the concept of scientifically measuring coffee extraction and to explore the elements of coffee brewing, brewing intermediate helps the coffee professional manipulate brew techniques to improve coffee quality. Brewing Foundation is a recommended pre-requisite. All coffee brewed during this course will be measured and charted by the AST for Strength and Extraction. Allow for discussion and questions.

Daily lunch is included in the registration fee.

Instructor Michael Breaux
Michael Breaux began working in the specialty coffee industry in Washington State in 2013, and has been dedicated to the art ever since. Joining the French Truck Coffee family in early 2016, Michael progressed from barista to director of education, crafting their specialty coffee training program. In 2017, Michael became an AST trainer under the new SCA education program, leading to the opening of the French Truck Coffee Lab as an SCA Campus. Through private barista classes, public cuppings, and home brewing classes, Michael aims to increase coffee knowledge in the community, and harbor a connection between those producing coffee and those that love to consume it!
